Nonstick cooking spray
3 egg whites
¾ cup sugar
½ cup (1 stick) butter, melted
¼ teaspoon pure vanilla extract
¼ teaspoon almond extract
1 cup all-purpose flour
1. Preheat the oven to 375°F. Mist a baking sheet with cooking spray and write fortunes on small strips of paper.
2. Place the egg whites and sugar in a large bowl and whip with an electric mixer until frothy. Stir in 2 tablespoons of water and the remaining ingredients until combined.
3. Spoon the batter onto the baking sheet to form 3-inch circles spaced evenly apart. Bake until the edges are browned slightly, 5 to 7 minutes.
4. While the cookies are still warm, place a message in the centre of each. Fold each cookie in half to conceal the message, then bring the corners together to form a horseshoe shape. Let cool.
